Ingredients
For the filling:
- 1 can creamy sweet corn
- 3 spring onions, finely chopped
- 1tsp curry powder (adjust to taste)
- ½ tsp chilli flakes (or more to taste)
- Salt — to taste
- 1 tbsp butter or oil
- 1/4 cup grated cheddar cheese
- Fresh coriander, chopped (optional)
Method
1. Prepare the Cheesy Filling
- Heat butter or oil in a pan over medium heat.
- Add the spring onions and sauté for 1–2 minutes until soft.
- Stir in curry powder and chilli flakes; cook 30 seconds to release flavor.
- Add the creamy sweet corn and mix well.
- Turn off the heat, then set the filling aside to cool down.
- Once it’s cool add the grated cheese and stir well.
2. Assemble the Samosas
- Take one samosa sheet and fold into a cone.
- Fill with about 1 teaspoon of the cheesy sweetcorn mixture.
- Seal edges with the flour-water paste.
- Repeat with the remaining mixture.
3. Cook
- Deep Fry:
Fry in medium-hot oil until golden and crisp (3–4 minutes per side). - Serve hot with any sauce of your choice.
